Beach mustard is an herb that grows completely out on the shore. It is succulent and can absorb large amounts of water in stems and leaves, so that it can withstand drying and the salty environment. Beach mustard has blue-green stems that are branched and lying or ascending. The herb flowers are violet and fragrant with four petals forming a cross. Beach mustard can be eaten and have a mustard taste, hence the name.
